Gluten Free Macaroni and Cheese

1/4 cup butter(divided)
8 oz. box of Quinoa Elbow Macaroni
2 cups shredded sharp cheddar cheese
3 tablespoons potato flour
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups milk

1. Spray cooking spray in a 2 quart casserole or baking dish.  Put 2 tablespoons of the butter in the casserole/baking dish and microwave until the butter is melted.  Pour the dried macaroni in the dish and stir until the noodles are covered in the melted butter.  Stir in the cheese.

2. Melt the other 2 tablespoons of butter in a sauce pan and add the potato flour, salt and pepper.  Stir until mixed and then add the milk.  Cook and stir over medium heat until the mixture is thick and bubbly.  Cook and stir for one more minute.  Pour this sauce over the macaroni/cheese mixture and stir gently.

3.  Bake, covered for 1 hour at 325 degrees.  Stir, and let stand for 10 minutes.

You may also add ham to this recipe!
